  1. Full-time Apprentice Chef

    The Shellharbour Club
     

    The Shellharbour Club is looking for an Apprentice Chef to join our large kitchen brigade who will make a positive contribution to the Club’s future whilst taking advantage of the potential career path on offer as the Club continues to grow.

    The Club has eight different food outlets with some of the cuisines including; Italian, Asian, Mexican and South American. There is also the opportunity to prepare superb food for the growing functions and events team – we are serious about providing variety and opportunities in these roles.

    The full apprenticeship is a 3 year engagement to complete the course and the successful candidate must be available to work a range of shifts including days, nights, split shifts and weekends.  At the end of the apprenticeship, there will be the possible opportunity to stay on-board in accordance with business requirements and performance.

    The Apprentice Chef will be enthusiastic and willing to learn and must be able to demonstrate the following criteria:

     
    • Be passionate about food and cooking.
    • Possess a sound work ethic and the ability to work as part of a team.
    • Excellent grooming and presentation standards.
    • Willingness to commitment to a 2-3 year apprenticeship including undertaking apprenticeship studies at TAFE one day per week
    • Excellent communication and organisational skills.


    In turn they will receive:
     

    • A nationally recognised Certificate III Commercial Cookery at the end of the apprenticeship should they fulfil the requirements and put in the hard yards. 
    • Be exposed to a variety of cuisines under the guidance of Chefs who have years of experience.
    • Be supported throughout your apprenticeship while having access to food and beverage discounts while on shift.
    • Their TAFE fees and resources paid for based on the successful completion of all units.
    • Government incentives.
    • Uniforms provided.

  2. Full-time Sous Chef

    The Shellharbour Club
     

    We have an exciting opportunity to appoint a full-time Sous Chef who is a natural-born leader and qualified to operationally manage and drive the +25 Kitchen brigade of Chefs, Cooks, Apprentices and Kitchen hands. Your experience will continue to transform the food offerings to take the 8 food establishments to the next level.

     

    Reporting to the Head Chef, you will be a true professional who is dedicated to delivering high quality cuisines. We only want the very best people to join our progressive and innovative team, which means you will be ambitious, hands-on and knowledgeable about existing and emerging trends in the market. Working in fast paced and high pressure environments is where you perform at your best.

     

    As the 2IC in the Kitchen, you would be responsible for:

     

    • Working with the Head Chef and management team to continue to translate concepts and ideas into successful performing food establishments.
    • Assisting the Head Chef with mentoring, training and developing the large kitchen brigade including rostering, staff development and performance management.
    • Taking responsibility for the smooth running of the kitchens and the implementation, evolution and ongoing improvement of standards and profitability.
    • Overseeing the effective management of catering control including stock levels, stock rotation and managing the ordering process.
    • Ensuring compliance with relevant Work, Health and Safety procedures including knowledge of HACCP.
    • Achieving the highest food standards in order to exceed customer expectations.

     

    What we are looking for to be successful in this role;

     

    • Energy, passion and demonstrated culinary experience.
    • 2-3 years’ experience as a qualified Sous Chef or in a similar capacity.
    • Food Safety Supervisor certificate or willingness to obtain.
    • Knowledge of Food Safety Principles and extensive food knowledge across a range of cooking styles.
    • Demonstrated ability to lead and motivate a team of kitchen professionals.
    • Sound organisational skills including time management, task prioritisation and resource scheduling.
    • Excellent communication and interpersonal skills.
    • Sound demonstrated knowledge in the areas of Work, Health and Safety and HACCP.
    • Ability to work a rotating roster including days, nights, split shifts and weekend shifts.

     

    Desirable:

     

    • Previous multi-venue experience.
